Thanks to Meijer, the Fox 17 Morning Mix has been able to bring you various holiday cookie recipes. Now, it's time to head to Meijer's Test Kitchen to bring one more holiday cookie recipe to the table.
Mexican Hot Chocolate Cookies
- 2 cups Meijer All-Purpose Flour
- 2/3 cup cocoa powder
- 1 Tbsp cinnamon
- 2 tsp Meijer Baking Soda
- 1 tsp salt
- 1 cup (2 sticks) MEijer Unsalted Butter
- 1 1/2 cups Meijer Granulated Sugar
- 2 large eggs
- 2 tsp vanilla extract
- oz package Meijer Milk Chocolate Baking Chips
- Preheat oven to F and lightly grease a baking sheet.
- Mix together flour, cocoa powder, cinnamon, baking soda and salt. Set aside.
- Cream together the butter and sugar until light and fluffy.
- Add vanilla and eggs one at a time until incorporated.
- Add dry ingredients and mix until just combined.
- Mix in milk chocolate baking chips until incorporated.
- Drop rounded tablespoons onto prepared baking sheet and bake for minutes or until just set.
- Cool completely and enjoy!

Rich Chocolate Pumpkin Truffles
Fix these elegant and easy Chocolate Pumpkin Truffles when guests and family are expected. Simply combine ingredients, roll and chill. A little coffee liqueur adds a spark of rich flavor.
2 1/2 cups crushed Meijer vanilla wafers (about 62)
1 cup ground, toasted almonds or other nuts
3/4 cup True Goodness by Meijer Confectioner's (powdered) sugar
2 tsp. McCormick ground cinnamon
1 cup NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1/2 cup LIBBY'S® % Pure Pumpkin
1/3 cup coffee liqueur**
COMBINE crushed cookies, ground almonds, 1/2 cup powdered sugar and cinnamon in medium bowl. Blend in melted chocolate, pumpkin and coffee liqueur. Shape into 1-inch balls. Refrigerate. Dust with remaining powdered sugar just before serving.
* Follow melting direction on NESTLÉ® package.
**1/3 cup apple juice can be used instead of coffee liqueur.

12 each dried (or fresh) figs and dried apricots
1. Chop or break chocolate in pieces and place in a microwave-safe bowl. Place microwave on 50% power and melt for 30 seconds. Stir thoroughly and microwave at 15 second intervals until chocolate is melted.

One loaf bakery pound cake or angel food cake, cut into slices, then fourths

1 pint fresh raspberries
Dark chocolate sauce in a squeeze bottle
1. Puree the frozen raspberries in your food processor or blender to create your puree. Add a bit powdered sugar if desired.
2. "Paint" the mini dessert plate with the bottled chocolate sauce and add a spoonful of raspberry puree.
3. Place one slice of cake onto puree and garnish with fresh raspberries.

2 tsp. McCormick Pure Vanilla Extract
2 True Goodness by Meijer Extra Large Eggs
3 1/4 cups Meijer Naturals white whole wheat flour
1 tsp. sea salt
/2 tsp. baking soda
1 cup EACH True Goodness by Meijer Milk Chocolate and Semi-sweet Baking Chips
1. Preheat oven to °F.
2. Cream together butter, sugar and brown sugar for 1 minute on medium speed with mixer or until fluffy. Add hot cocoa packets, vanilla and eggs then mix to combine.
3. In a medium size bowl whisk together the flour, salt and baking soda. Add into butter mixture and mix 1 minute or until well combined. Fold in baking chips.
4. Place on a parchment paper lined baking sheet and drop by tablespoon full scoops.
5. Bake for approx. 10 minutes or until golden on the edges but still soft in center.

3 cups Meijer White Whole Wheat Flour
1/4 teaspoon salt
3/4 teaspoon baking soda

1/4 teaspoon McCormick® ground nutmeg
1/4 teaspoon McCormick® ground cloves
1/2 cup True Goodness by Meijer Organic unsalted butter, softened
1/2 cup True Goodness by Meijer Organic granulated white cane sugar
1 large egg
2/3 cup dark molasses
1. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add egg and molasses and then beat until well combined.
2. In second large bowl, stir together flour, salt, baking soda, and spices. Gradually add the flour mixture (1/3 at a time) to the butter mixture, beating until incorporated.
3. Divide the dough in half, and wrap each half in plastic wrap and refrigerate for at least two hours or overnight.
4. Place oven racks in center of oven. Preheat oven to oF. Line 2 baking sheets with parchment paper and set aside while you roll out the dough.
5. On a lightly floured surface, roll out the dough to a thickness of about 1/4 inch. Use a gingerbread cookie cutter or other shapes to cut out cookies. Using a spatula lift the cut out cookies onto the baking sheet, placing the cookies about 1 inch apart.
a. Note: If you are hanging the cookies or using as gift tags, make a hole at the top of the cookies with a straw or end of a wooden skewer.
6. Bake 8 - 12 minutes. Cookies are done when they are firm and the edges are just beginning to brown.
7. Remove the cookies from the oven and let stand one minute. When they are firm enough to move, transfer to a wire rack to cool completely.

In a mixing bowl combine sugar, water, meringue powder and cream of tartar and beat on low speed until just blended, then beat on high speed minutes until stiff peaks form. Use pastry bag with tips to decorate cookies. Refrigerate any leftover icing covered with a damp cloth.

Peanut Butter Date Balls
Makes 3 dozen
2 cups True Goodness by Meijer Organic Confectioner's sugar
1/4 cup True Goodness by Meijer Organic unsalted butter, room temperature
1 1/2 cups True Goodness by Meijer Crunchy peanut butter
2 cups chopped dates
1 cup finely chopped walnuts or pecans (substitute raw pumpkin seeds for those with nut allergies)
1 cup True Goodness by Meijer Organic chocolate baking chips
2 cups Butterscotch chips
1. In a large bowl mix together sugar, butter, peanut butter, dates and nuts (or pumpkin seeds) until well combined.
2. Shape into 1" balls and place on wax paper or parchment paper lined cookie sheet and chill thoroughly in freezer about 20 to 30 minutes.
3. Mix chocolate and butterscotch chips together in microwave safe bowl and melt in microwave on 50% power for 30 seconds. Stir thoroughly and microwave at 15 second intervals until melted.
4. Drop peanut butter balls one at a time into melted chocolate mixture to coat; return to wax or parchment paper lined cookie sheet and refrigerate until set.
5. Store refrigerated in a covered container.
Double Chocolate Peppermint Granola

3 cups True Goodness by Meijer Old Fashioned Oats
1/2 cup True Goodness by Meijer Unsweetened Coconut Flakes
1/2 cup sliced almonds
1/2 cup walnut pieces
4 Tbsps. golden flaxseed
3 Tbsps. cocoa powder
1/2 cup melted, True Goodness by Meijer Coconut Oil
1/3 cup agave nectar
¾ tsp. peppermint extract
1 cup True Goodness by Meijer Milk or Semi-sweet Baking Chips
1. Preheat oven to °F.
2. Combine oats, coconut flakes, almonds, walnuts, flaxseeds and cocoa powder in a large bowl.
3. Mix coconut oil in a microwave safe small bowl. Mix in agave nectar and peppermint extract. Pour oil mixture into oat mixture and stir to combine.
4. Pour granola on a parchment lined baking sheet and bake for 50 to 60 minutes. Stir granola times during baking process.
5. Cool granola completely then fold in baking chips.
6. Store in an airtight container.

2. In a large mixing bowl beat pumpkin, oil, sugar, eggs, water and vanilla for 2 minutes until well blended.
3. Stir all dry ingredients together in a large bowl. Add half at a time, beating until well combined.
4. Pour into four well-greased 4 ¾" small bundt pans or 36 muffin cups (line with muffin papers)—filling 2/3 full.
5. Bake 1 hour for small bundt pans, 35 minutes for muffins. Cakes should be well risen, medium brown and firm to the touch.
6. Remove from oven and let cool 10 minutes. Remove from pans and transfer to wire racks; allow to cool.

1. In a medium bowl, beat cream cheese with an electric mixer for 30 seconds.

3. Drizzle over cooled pumpkin bread.
